Lightly cold smoked over maple wood, this semi-firm Guernsey cows milk cheese is fruity, tangy and a little salty. Golden inside, its smooth and creamy with some sharpness on the finish. Warming this cheese brings out the smokiness and makes it even creamier.

NIAGARA GOLD - (150 - 200g approx) UPPER CANADA CHEESE CO
This award-winning semi- soft, washed rind cheese is crafted using time-honoured Trappist monk techniques. Taking First Place at the 2020 Royal Agricultural Winter Fair in the Semi-Soft cheese category, Niagara Gold is crafted from pure A2 Guernsey milk, making it rich, creamy, and easier to digest than regular cow's milk. Cloaked in an edible rid its nutty and earthy with a slight salty tang and creamy sweetness.

NOSEY GOAT - (150 - 200g approx) - UPPER C
a great introduction to goat cheese for the less adventurous. This washed-rind cheese is grassy with notes of straw and hay, mouthwatering umami and subtle saltiness. Inside it's creamy and bounce, and melts beautifully and would enhance recipes that call for Gouda or Edam. Each round is carefully turned, washed with brine twice a week, and aged for minimum 6 weeks.
